BLUEBERRY BREAKFAST FRITTERS
1 slice Sara Lee Delightful 45 Calorie bread
1 egg
1 tablespoon plain unsweetened almond milk
2 teaspoons 0 point sweetener of choice
dash cinnamon
1/8 teaspoon vanilla extract
1/2 cup fresh or frozen blueberries
If blueberries are frozen go ahead and set them out to thaw. Cut bread into small cubes, place in a small bowl
and set aside. Mix egg, milk, sweetener, cinnamon and extract in a blender and blend only until smooth. Before
you add the egg mixture to the bread gently mash the blueberries with a fork. Add them to the bread being careful
not to get any of the juice mixed it. Then add the egg mixture and stir until it is soaked into the bread. Do this right
before frying to keep the bread from getting too mushy. Drop onto hot frying pan which has been sprayed with
cooking spray and fry on both sides until golden brown and bread is set. I make 3 fritters per recipe but you can
cook them in any size you like. Makes 1 serving.
