BREAKFAST CASSEROLE
16 ounces western style frozen hash browns cubes, thawed
1 cup frozen corn kernels, thawed
House Seasoning, or other
1 red onion, chopped
1 green pepper, chopped, opt
6 ounces Canadian Bacon, diced small
5 eggs
1 cup skim milk
hot sauce, to taste
4 ounces shredded Cabot Light Cheddar Cheese
Begin by place the hash browns and corn in a sprayed 9 x 13 inch baking dish to thaw before you start making the casserole.
Once thawed sprinkle with House Seasoning and toss. Then add onion, pepper, if using and Canadian Bacon; mix well.
In a small bowl whisk together eggs, milk and hot sauce and pour over potato mixture. Stir to get it all coated.
Sprinkle with the cheese. Bake at 350 for 40 minutes. Makes 6 servings.
