SAUSAGE GRAVY BREAKFAST BOWLS

104 grams shredded hashbrowns
2 scrambled eggs
1/3 cup prepared Pioneer Country Gravy Mix
2 ounces cooked turkey breakfast sausage (see recipe below)*

You can either make these one at a time or meal prep as many as you'd like.  The instructions I'm giving are for makig
just the one but you can easily multiply the ingredients by the number you want to make and divide into containers.   


It's totally a personal preference but I like to thaw my hashbrowns or microwave them for one minute before cooking them. 
When done put them in the bottom of the bowl and top with the scrambled eggs.  Make the turkey sausage and set aside. 
Prepare the gravy mix as directed on the package; set aside. To finish assembling weigh out 2 ounces of the turkey sausage
​in a small bowl.  Add in the 1/3 cup gravy, stir well and pour on top of the eggs.  Store in the fridge.

Points for one bowl are Blue (4) Purple (2) Green (9)

*You may also add any other breakfast meat you like just adjust the points.

TURKEY BREAKFAST SAUSAGE

I use the recipe from Joan's Pointed Plate (the poultry seasoning version) and it is linked below.  However,
I do it a little differently

Mix spices and set aside.  Brown turkey in skillet and sprinkle with spices. Stir to mix well.  Use anywhere you'd use
regular pork breakfast sausage.

​​TURKEY KIELBASA BREAKFAST BOWLS

Start with the hashbrowns and eggs in the bowl like above. Sprinkle with ½ ounce shredded Cabot 75% light cheddar
​cheese and then top with 2 ounces sliced and cooked turkey polska kielbasa.

Points for one bowl are Blue (5) Purple (3) Green (9)

CANADIAN BACON BREAKFAST BOWLS

2/3 cup Simply Potatoes diced potatoes
chopped onion
2 eggs, scrambled
up to 4 slices Jones Canadian bacon, chopped
1/4 cup Velveeta sharp cheddar cheese shreds

Cook potatoes and onions together in a little oil spray until tender.  Layer potatoes, then bacon, eggs and
​end with cheese on top. 
​Points for one bowl are Blue (5) Purple (3) Green (9)

SAUSAGE GRAVY & RICE BREAKFAST BOWLS

2 1/2 cups cooked instant white rice, or rice of choice
10 scrambled eggs
1 package prepared Pioneer Country Gravy Mix
5 - 6 ounces cooked turkey breakfast sausage (see recipe above)

Put 1/2 cup rice in the bottom of each bowl and top with two soft scrambled eggs.  Make the turkey sausage
and set aside.  Prepare the gravy mix as directed on the package and add the sausage. To determine how much
​ sausage gravy to use on each bowl weigh the entire amount and divide by 5. Store bowls in the fridge.
​Makes 5 bowls.

Points for one bowl are Blue & Purple (5) Green (9)
