BOILED PEANUTS
2 pounds raw peanuts, not green, dried or roasted
water
1/2 cup salt
Soak peanuts in water and swish around to move as much dirt as possible. Drain and put back into the instant pot. Use either the 6 or 8 quart. Cover with water being careful not to go over the fill line inside the pot. Place trivet on top of peanuts. On top of the trivet place an oven proof bowl or dish filled with water. This will weigh them down and keep most of the peanuts from floating up and above the water line. Cover, seal the vent and cook on high for 3 hours. Test for doneness and add more time as needed. If more water is needed to cover use hot water only. To store cool then cover them with some of the cooking water in a large container and refrigerate. Tip: when removing from the pot scoop out with a slotted spoon to keep the grit that has fallen to the bottom out of your storage container.
If cooking on the stove follow the exact same directions above except just boil in a large pot for 6 to 8 hours or until done. Replace water as needed.
