BLUEBERRY MUFFINS
1 cup blueberries
1 3/4 cup all purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 egg
1 cup sour cream
1/3 cup milk
Toss blueberries with 1 tablespoon of flour and set aside. Mix sour cream, egg, and milk. Add sugar. Sift in flour,
baking powder, soda and salt. Fold in berries. Bake in well greased or paper-lined muffin pans at 400° for 20 minutes
or until done. Cool completely before storing. Makes 12. For added crunch and flavor sprinkle the tops with cinnamon
sugar before baking.

1 cup nonfat plain Greek yogurt
1/3 cup skim milk
Toss blueberries with 1 tablespoon of flour and set aside. Mix yogurt, egg, and milk. Add sweetener. Sift in flour,
baking powder, soda and salt. Fold in berries. Bake in well greased or paper-lined muffin pans at 400° for 20 minutes
or until done. These are a heavier muffin than the regular recipe. Cool completely before storing. Makes 12.
