BEEF TACO SOUP
2 cans kidney beans, rinsed & drained
2 cans pinto beans, rinsed & drained
2 cans corn, undrained
4 cans diced tomatoes, undrained
2 packets taco seasoning mix (see homemade recipe in the Sauces & Mixes section)
1 packet ranch dressing mix
1 pound hamburger, cooked and drained (or any ground meat your prefer)
Toppings: tortilla chips, sour cream, shredded cheese, avocado, black olives
Add all the ingredients to the crockpot and stir well. Cook on low for 8 - 10 hours or on high for 4 - 5 hours. Serve with
toppings of choice just be sure to add the points in addition to the soup.
Points for this soup will be determined by the type of ground meat your use. For this particular recipe I used 93% lean
ground beef and these points are calculated for that. Makes 16 cups.
