BANANA NUT MUFFINS
adapted from Nutrisystem

2 ripe bananas
1 cup old fashioned oatmeal
1/2 cup crushed walnuts
2 tablespoons brown sugar substitute, or to taste
1 teaspoon baking powder
1 - 2 teaspoons cinnamon, to taste
dash salt

In medium size bowl mash bananas.  Add remaining ingredients and stir to mix well.  Spray 5 cups of a muffin tin
with cooking spray.  Evenly divide batter between them.  They will be almost completely full.  Bake at 350
for 15 - 20 minutes or until toothpick comes out clean.  Makes 5 muffins.
