BANANA ALMOND CAKE
2/3 cup slivered almonds
1/4 cup packed brown sugar
2/3 cup softened butter
1 1/2 cup sugar
2 eggs
3/4 teaspoon almond extract
3 cups all purpose flour
2 teaspoons baking soda
1/4 teaspoon baking powder
2 cups mashed ripe bananas (about 3 or 4)
1 cup sour cream
1 cup chocolate chips
In a small bowl mix together silvered almond and brown sugar; set aside. In a large bowl beat
butter and sugar until fluffy. Beat in eggs one at a time then beat in extract. In a separate bowl
combine flour, baking soda and baking powder. Add to the creamed mixture alternately with the
sour cream and bananas. Beat well after each addition. Fold in chocolate chips. Pour into a
greased 9 x 13 inch baking dish. Sprinkle with reserved almond mixture. Bake at 350 for 35 to 40
minutes or until a toothpick near the center comes out clean.
