BAKED BLUEBERRY PEACH OATMEAL
3 cups old fashioned oatmeal
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 egg whites
1 whole egg
1 1/4 cups plain unsweetened almond milk, or milk of choice
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1 can sliced peaches in juice, drained and chopped
1 cup fresh or frozen blueberries
1/3 cup chopped walnuts
In a large bowl mix dry ingredients; set aside. Whisk together eggs, applesauce, milk and vanilla until well blended
and add to the dry ingredients. Stir in blueberries and peaches. Pour into a greased 9 x 13 inch baking dish and sprinkle
with walnuts. Bake at 350 for about 30 - 35 minutes. Makes 6 servings.
