BACON PANCAKE DIPPERS

2 cups Kodiak pancake and waffle mix
1 teaspoon baking powder
1 tablespoon brown sugar substitute
1 3/4 cups cashew or almond milk, may not need it all
1 egg, beaten
12 slices Great Value Fully Cook bacon

To begin stir together the pancake mix, baking powder and brown sugar with enough milk to make a thick batter.
in the egg and as much more, if any, milk to make a slightly thick pancake batter. Not too thick you just don't want
it to run off the bacon.  Let batter sit while you preheat your pan. Working in batches lay slices of bacon in hot pan
and spread 1/4 cup batter over entire surface of each one. No need to cook the bacon first.  Cook until set then flip
​and cook the other side. 
Makes 12 dippers.
1 dipper = Blue (2) Purple (2) Green (3)
2 dippers = 5 points on all plans

To make ahead simply cool completely and store between sheet of waxed paper and place in a container or
​ freezer bag. I plan on reheating the frozen dippers in my air fryer oven on 400 until hot throughout.
