BACON CORN CHOWDER
3 slices bacon, diced
1/2 cup diced celery
1/2 cup chopped onion
1 small potato, peeled and diced
1 cup water
1 cup milk
1 can creamed corn
1/2 teaspoon salt
1/4 teaspoon garlic powder
In a medium sized pot cook the bacon, celery and onion until the bacon is done. Then add the potatoes
and water. Bring up to the boil, cover and simmer until potatoes are tender. If all the water evaporates
out add about 1/2 cup water. Next add milk, corn and seasonings and heat through. If chowder is not
thick enough for you you may thicken it with a slurry of cornstarch and water. I used 1 tablespoon cornstarch
to 1 tablespoon water. Makes 2 - 3 servings.
