BACON CHEESEBURGER BITES
1 pound 93% lean ground beef
1 egg
1/4 cup plain dry bread crumbs
1 teaspoon onion powder
1/2 teaspoon salt or to taste
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
3 slices center cut bacon, dried, drained and chopped small
2 green onions, sliced
3 slices cheese
waffle French fries
2 - 3 whole dill pickles
ketchup, mustard, 1000 Island Dressing
In a medium sized bowl beat egg then add bread crumbs, spices and Worcestershire; mix well. Mix in the hamburger
and combine then add in bacon and onions. Scoop about 2 tablespoons of meat mixture for each meatballs onto sprayed,
foil lined baking sheet until all is used up. Bake at 400 for about 15 minutes or until done. You can make the waffle fries
before the meatballs and set aside or wait until afterwards or even at the same time. I make mine in the air fryer while
the meatballs are baking.
In the meantime while they are baking stack the three slices of cheese together and cut into 9 squares for a total of 27; set aside.
Cut ends off pickles and discard then slice into medium thick slices;set aside. Once meatballs are done top each one with a
cheese square and put back in the oven for a few minutes or just until cheese is beginning to melt but not drip. Remove from
oven and let cool just slightly. To assemble cut any large fries in half and place one meatball on top of each on. Top with a
pickle slice and secure with a toothpick. Serve with bowls of ketchup, mustard and 1000 Island Dressing.
These are easy enough to make ahead and reheat. Reheat the meatballs separately from the fries so they don't get too tough.
Then just assemble.
