APPLE SPICE OATMEAL MUFFINS
3 cups old fashioned oatmeal
1 teaspoon apple pie spice, or my homemade version
1 teaspoon baking powder
¼ teaspoon salt
2 eggs
¼ cup brown sugar
½ cup nonfat plain Greek yogurt
1/2 cup unsweetened applesauce
2 teaspoons vanilla
1 cup unsweetened almond or cashew milk
2 small apples, peeled and chopped small
In a small bowl mix oatmeal, apple pie spice, baking power and salt; set aside. In a large bowl beat the eggs then
add the remaining ingredients except the apples and whisk until well combined. Add dry ingredients to bowl of wet
ingredients and mix well. Allow this this sit while you peel and chop the apples then stir them in. Divide evenly between
12 sprayed muffin cups. Bake at 350 for 30 minutes. Let cool about 5 minutes then turn out onto waxed paper to cool.
Store in the fridge. They also will freeze well. Makes 12.
