APPLE PIE WAFFLES
1 egg, beaten
1/2 cup plain Kodiak pancake and waffle mix, or Birch Benders or Bisquick
1/2 teaspoon baking powder
1 pouch Alpine Sugar Free Apple Cider Mix, divided
1 teaspoon apple pie spice
1 teaspoon vanilla extract
2 teaspoons monkfruit sweetener, or sweetener of choice
1/4 cup unsweetened applesauce
1 apple, peeled and diced small, divided
water, if needed
Topping
leftover diced apples
1/4 cup sugar free pancake syrup
1/2 teaspoon apple pie spice
leftover Alpine Sugar Free Apple Cider Mix
Mix everything together except apple and using only 1 teaspoon of the cider mix. Add water a small spoonful at a time
if needed to get the desired consistency. Add about 1/3 of the diced apple and mix well. Makes 4 waffles using the
Dash mini waffle maker.
To make the topping saute apples in a little pan spray or olive oil spray until softened. Add syrup, apple pie spice
and cider mix. Heat through. It will thicken up very quickly if you're not careful. If it does thin it out with small bits
of water at a time and heat through until it's the desired consistency. Serve over waffles.
