APPLE PIE FRENCH TOAST CASSEROLE
12 slices Sara Lee Multigrain Delights bread
2 cups unsweetened almond milk
1/2 cup unsweetened applesauce
8 eggs
1 tablespoon Country Crock Light, melted
1/4 cup sugar free pancake syrup
2 tablespoons brown sugar substitute
2 teaspoons apple pie spice
2 teaspoons vanilla
1/4 teaspoon salt
APPLE TOPPING
1 large apple, peeled and diced small
1 teaspoon apple pie spice
1 tablespoon sugar substitute of choice
1/2 teaspoon cornstarch
3 tablespoons water
Put apples in a sprayed microwave safe dish and sprinkle with spice and sugar. Stir to combine. Mix the cornstarch
into the water and pour over apples. Microwave, uncovered, 2 - 3 minutes or until as soft as you like. This will thicken as it cools.
Cut bread into bite sized pieces. Spread into a sprayed 9 x 13 baking dish. In a large bowl mix together all the remaining
ingredients, except apple topping, until well combined. Pour over bread. Cover with foil and refrigerate at least 30 minutes
or overnight. While the casserole is chilling make the apple topping so it has time to cool before using. Then right before
baking spoon the topping evenly over the casserole but do not mix in. Bake, uncovered, at 375 for 35 - 40 minutes
or until golden brown. Makes 6 servings.
