ANTIPASTO SUBS
1/4 cup cream Italian salad dressing (I used Kraft)
2 tablespoons grated Parmesan cheese
1 can artichoke hearts, drained and chopped
1 cup cherry or grape tomatoes, quartered
1 small can sliced black olives (2.25 ounces)
2 ounces turkey pepperoni, cut into thin slivers
1/2 cup (2 ounces) shredded part skim mozzarella
2 sub or hoagie rolls*
In a medium bowl stir together salad dressing and Parmesan cheese. Add in everything else except the cheese and
roll and toss to coat. Cut each roll in half horizontally and make a boat by scooping out the middle bread being careful
not to tear the bottom. If you want you can weigh the roll (in grams) before and after you scoop out the middle. It may
actually reduce the points by one. Place roll halves under the broiler for no more than 2 minutes just to start to brown
and get toasty. Spoon 1/2 cup filling into each roll. Top evenly with cheese and broil until cheese is melted.
This will only take a few minutes. If you want a sub that is hot all the way through the filling put them on bake instead
of broil. You may opt to use 3 hoagie rolls and make 6 subs to use all the filling for that (you will need more mozzarella
cheese for the top) or keep it at 4 subs and use the remaining 1 cup of filling for a salads the next day.
Makes 6 -1/2 cup servings of filling. Rolls will be pointed extra.
