AMISH BREAKFAST CASSEROLE
1 box Butterball Turkey Sausage Links (8 ounces) or other sausage of your choice
chopped onion to taste
1 pound shredded hashbrowns, thawed
3 eggs
3/4 cup cottage cheese
3/4 cup shredded Swiss cheese
1 cup shredded cheddar cheese
Cut sausage links into smaller bite sized pieces and cook in a large skillet with onion until both sausage
and onions are done. Meanwhile place hashbrowns in a large bowl. Stir in eggs until blended throughout.
Then stir in cottage cheese until well blended. Then stir in both cheeses. When sausage and onions
are done add them to the hashbrown mixture. Pour into a greased 9 x 9 inch baking dish. Pat it down
with a spoon. Bake at 350 for 35 - 45 minutes. Mine got brown around the outside but not on the top and
was done in 45 minutes.
