ALMOND JOY GLAZED DONUTS
½ cup Kodiak pancake & waffle mix
1 teaspoon baking powder
2 tablespoons cocoa powder
2 -3 tablespoons Lakanto monkfruit sweetener, or any 0 point sugar substitute
1/2 cup unsweetened cashew or almond milk or water
1 egg
1/2 teaspoon almond extract
1/2 teaspoon coconut extract
(you can also use 1 teaspoon vanilla extract instead of the almond and coconut)
5 tablespoons Lakanto powdered sugar substitute*
1 tablespoon cocoa powder
4 - 5 teaspoons unsweetened cashew or almond milk
1/2 teaspoon vanilla extract
4 grams unsweetened coconut flakes, chopped fine
4 grams almonds, chopped fine
Stir together Kodiak mix, baking powder and cocoa powder until well combined. Add egg, milk and extracts
and whisk until all lumps are dissolved. Spoon into sprayed donut pan and bake at 350 for 12 minutes or until done.
While donuts are baking make the glaze by whisking together the powdered sugar substitute and cocoa powder.
Add in the vanilla extract and then the milk one teaspoon at a time until you get the desire consistency.
Allow donuts to cool slightly, spread each one with some glaze then sprinkle with chopped almonds and coconut.
Makes 6 donuts.
