​ALFREDO WITH MUSHROOMS & ONIONS

8 ounces mushrooms, washed and chopped
1/2 cup chopped onion
2 tablespoons olive or avocado oil
1/2 to 1 teaspoon xanthan gum (use 1 to 2 tablespoons cornstarch if not watching your carbs)
2 cups heavy cream
1 teaspoon dried thyme
1 cup shredded parmesan cheese

Add the oil to a heated saucepot or pan then add the mushrooms and onions.  Stir to coat with oil and leave to
cook about 4 to 5 minutes or until done.  Don't stir but maybe once and they will cook perfectly.  Sprinkle with
1/2 teaspoon xanthan gum (or cornstarch) and stir to combine.  Add the heavy cream and cook until it thickens
to your liking.  You may need to add a bit more xanthan gum or cornstarch (mixed with water).  Then add thyme
and cheese and stir until cheese melts.  Cover to keep warm while making your pasta.  Makes 4 servings which
​is enough to coat 6 to 8 ounces pasta.
Sauce only 7 net carbs.
