AIR FRIED PORK RIND COATED CHICKEN
3 boneless skinless chicken breasts
1 ounce pork rinds
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 egg
Place pork rinds into a food processor and process until you have even crumbs. Place in a shallow dish, add garlic
and onion powder and set aside. In a separate dish beat the egg with a fork. One at a time dip chicken breasts into egg
and then into pork rind crumbs. Place in air fryer and cook on 400 degrees. I did 5 minutes, flipped for another 5 minutes
and then flipped back for 2 more minutes. Cooking time will depend on the size of the chicken breasts.
Pork rind coating is 1 point per piece of chicken on all plans. Green needs to count points for the chicken.

*1 ounce of crumbs was just enough to coat the 3 small-medium chicken breasts. So you may need to use more
according to how much and how big your chicken is. To get the right points just be sure to weigh your crumbs before
and then any leftovers you have.
