0 POINT CHOCOLATE SYRUP
1/4 cup unsweetened cocoa powder
1/2 cup water
1 cup monkfruit sweetener, I use Lakanto
pinch salt
1/4 teaspoon vanilla
Whisk together cocoa powder and water over medium - medium high heat until fully dissolved. Add sweetener
and salt and again whisk until fully dissolved. Continue to whisk occasionally while bringing to a full rolling boil.
Reduce heat just a bit if needed and continue to boil for 3 minutes, whisking frequently. Remove from heat and
stir in vanilla. Pour into container and refrigerate. Makes about 1 1/3 cup.
This does not thicken like my original recipe that uses sugar but it tastes so good I don't even mind! I maybe will cook a
little longer next time to see if that makes a difference but it works perfectly as is in milk!
***UPDATE: After it completely cooled the monkfruit started to crystallize. I stirred it into a glass of milk and it dissolved
just fine. If using on anything else like ice cream or cake I would warm it up to re-dissolve the monkfruit, but other than that
it's still just as delicious!
