SWEET POTATO MASH
2 large sweet potatoes, peeled and cut into large chunks
3/4 cup water
salt and pepper to taste
4 tablespoons butter, cut into smaller pieces
1/2 cup half and half or heavy cream
Put sweet potatoes, salt and pepper and water in the instant pot. Cover, close vent and cook
on Hi for 8 minutes. When done do a quick release of the pressure. Pour off the excess water.
Mash the potatoes with a potato masher and add butter. Continue to mash until butter is melted.
Add half and half and mash until it is smooth. You can use more or less cream depending on the
texture of the mash you desire.
