SAUTEED MUSHROOMS & ONIONS IN GRAVY
2 tablespoons butter
1/2 medium onion, chopped
2 cloves minced garlic
1 pound whole button mushrooms, washed and stem removed
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup beef broth
1 tablespoon cornstarch
Turn instant pot to sauté until it reads hot. Melt the butter and add the onions and sauté until
they are soft then add the garlic and sauté about 1 minute. Add the mushrooms, salt and pepper
and stir to combine. Cook for about 5 minutes or until mushrooms begin to release their
juices. Cancel the sauté function. Add beef broth. Cover, close vent and cook on Hi for 3 minutes.
When done do a quick release of the pressure. Cancel pressure cook and turn on sauté. In a
small bowl mix the cornstarch with one tablespoon water. Add to the mushrooms and stir until
it thickens to your desire.
