RAW APPLE CAKE
2 cups sugar
3 eggs
1 1/4 cup vegetable oil
1/4 cup orange juice
3 cups all purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup raw apple, peeled and diced into small pieces
1 cup coconut
1 cup chopped pecans
Sauce:
1 stick butter
1 cup sugar
1/2 teaspoon baking soda
1/2 cup buttermilk
Cream together sugar and eggs and add oil and vanilla, Beat well. Mix dry ingredients and add
a few batches at a time to wet ingredients and beat until well blended. Beat in coconut and nuts.
Pour into a tube pan that has been greased and floured or sprayed with a spray containing flour.
Bake 325 for 1 ½ hours.
Sauce
1 stick butter

Mix everything in a pot and bring to a boil. Pour over baked cake in pan. Let sit for 1 hour, before turning out on plate.
Freezes well. Better the longer it sits.
