QUICK & EASY BEEF NOODLE SOUP
1 tablespoon butter
1 pound lean ground beef
1/2 onion, chopped
3 stalks celery, sliced
2 carrots, cleaned and sliced
1 teaspoon dried thyme
1/2 teaspoon salt
8 ounces tomato sauce
8 ounces dry rotini pasta
4 cups beef broth
Turn pot to saute and when "hot" flashes add butter. Then add the ground beef and stir
and crumbled until done. Add onions, celery, carrots, thyme and salt. Cook until vegetables
begin to soften You may loosely rest the lid on top to keep in the heat and help it cook
a little faster. Once vegetables are ready turn off saute. Add tomato sauce and stir in. Pour
dry noodles. Do not stir in. Pour broth over top and do not stir but make sure all the noodles'
are pressed below the broth. Cover and press the soup/broth button and set to 5 minutes. Use
6 minutes if you want the pasta a bit softer. Once done do a quick release of the pressure.
