PUMPKIN SWIRL FRENCH TOAST CASSEROLE
1 loaf (16 ounces) Pepperidge Farms Pumpkin Swirl Bread, cut into small cubes*
8 ounces cream cheese, cut into small cubes
8 eggs
1 1/2 cup half and half
1/4 cup granulated sugar substitute, I use Lakanto monkfruit classic
1/4 cup brown sugar substitute, I used Truvia
1/2 cup sugar free pancake syrup
1 tablespoon vanilla
2 teaspoons pumpkin pie spice
Place half the bread cubes into a sprayed 9x 13 inch baking dish. Top evenly with all the cream cheese
cubes and then remaining bread cubes; set aside. In a bowl whisk together remaining ingredients
until well combined and pour over top of bread. Push bread cubes down into the egg mixture until they
are all coated. Some will stay on the top but it will still bake up just fine. Cover and refrigerate at least
30 minutes to overnight. In the morning remove from refrigerator and let sit at room temperature for
one half hour. Cover and bake at 350 degrees for 30 minutes. Remove cover and bake another 20
minutes or until a knife inserted in the center comes out clean. .
*You can use any flavor of the swirl breads.
