PINEAPPLE BBQ CHICKEN WITH BACON
2 chicken breasts or 4 thin cutlets
Salt and black pepper to taste
1/4 cup sugar free BBQ sauce
1 cup pineapple diced, canned pineapple tidbits work great
6 strips bacon cooked and diced
¼ red onion sliced
1/4 cup Mozzarella cheese shredded
sliced green onion, for garnish
If using 2 full breasts begin by cutting them into two thinner pieces horizontally. Between two
pieces of plastic wrap pound them into thinner pieces trying to keep them all the same thickness.
If using 4 cutlets you needn't prep them. Lay each piece of chicken into a sprayed 9 x 13 inch
baking dish. Salt and pepper to taste and set aside. Cook bacon, drain and set aside. If using
the pineapple tidbits, drain them before measuring. If you are using a can of chunk pineapple
dice then into smaller pieces.
Now assemble the chicken. Spread each breast with BBQ sauce. Top with pineapple, then bacon,
then red onion. Sprinkle with mozzarella cheese. Bake at 400 for about 20 minutes. Check your
temperature to make sure it is done. The temperature should be at least 165. To serve top with
sliced green onion.
