PECAN LOGS
12 ounces vanilla wafers
4 cups (1 pound) pecan halves
1 can sweetened condensed milk
Crush vanilla wafers until fine in a food processor and pour into a large bowl. Process the pecans until
finely chopped and pour into the bowl with the cookies. Pour the milk over top. Stir until well
combined and all the ingredients have been coated and there are no dry spot. This will take a few
minutes. Divide in half and put each half on a large sheet of wax paper. Spray hands with cooking
spray to keep from sticking to the dough. Pat and form into a tight log so it will stick together.
Wrap in wax paper and form it into a better log if you can, if not it will be fine and not affect the taste.
Chill in the fridge for a few hours or until hardened and each to slice. Store in the fridge for best
results. They freeze well.
