OVEN BARBECUED CHICKEN
bone in pieces of chicken with skin on
1 small onion, cut into small slices
1 cup ketchup
1 cup water
1/4 cup lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
2 tablespoons yellow mustard
2 tablespoon vinegar
Begin by browning both sides of chicken in a bit of oil. Use as many pieces of chicken as will fit
comfortably in an 11 x 7 inch baking dish. Once chicken has brown place skin side up in the sprayed
baking dish. In the same pan pour off all oil except for about a tablespoon and add onions.
Saute until tender. Then add remaining ingredients and simmer for 10 minutes, stirring to combine.
Pour sauce over chicken and bake at 325 for an hour to and hour and 15 minutes. Baste occasionally.
Basting makes a difference. We think it would also make a great sauce to use on the grill outside.
To cut the carbs more you may choose to use sugar free ketchup and brown sugar substitute.
