OATMEAL TOPPING
1/4 cup chopped pecans or walnuts
1 apple peeled and diced finely
1 tablespoon honey
1 cup apple juice
1/4 cup brown sugar
1/4 cup raisins
1/2 teaspoon cinnamon
Carefully toast nuts in a dry skillet just until fragrant. Then add remaining ingredients. Cook until
apples are tender and juice has evaporated. Mixture will be thick. Serve over cooked oatmeal.
May be stored in the refrigerator for about a week.
