2 sticks butter, softened
2 tablespoons sugar
2 1/2 cups all purpose flour
pinch salt
1 cup pecans, chopped fine but not ground
powdered sugar
In a mixer cream together the butter and sugar until fluffy. Beat in the flour and salt.
Mixture will be dry and crumbly. Mix in the pecans. Mixture will still be dry and
crumbly. TRUST THE PROCESS. Roll into small marble sized pieces by first pressing
dough between both hands to get it to stick together. Then you can roll it between your
hands gently to shape it. Place on a parchment lined baking sheet and bake at 350
for 20 minutes. Remove from oven and while still hot roll in powdered sugar until
heavily coated. Makes approximately 40 cookies.
