MAMAW'S FRUIT COCKTAIL CAKE
1 can fruit cocktail, undrained
2 teaspoons baking soda
2 teaspoons vanilla
2 cups plain flour
2 cups sugar
2 eggs
pinch salt
TOPPING:
1 small can evaporated milk (5 ounces)
1 cup sugar
1 stick butter
1 can coconut or equivalent amount to taste
Mix all cake ingredients well and bake in a greased 9 x 13 inch baking dish for 35 - 40ish minutes at 350* or until done.
To make topping boil all topping ingredients for 10 minutes over low heat and pour over warm cake.
