LOW CARB BAKED CHEESE STICKS
12 pieces string cheese, cut in half
1 egg
1/2 cup pork rind crumbs*
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
black pepper to taste
In a Ziplock or other plastic bag mix the crumbs, cheese and seasonings and shake to mix well. Dip each
cheese stick half into the egg and drop into the crumb mixture. Give it a little shake to coat and place
on a baking sheet that has been lined with waxed paper. Repeat with all the cheese. Place the baking
sheet in the freezer for at least 1 hour before baking. Bake in a 400 degree oven for 3 to 4 minutes.
Your time may vary depending on your stove. Wash these carefully because they will ooze out if baked
too long. You may can cook them in the air fryer but I didn't test one so I'm not certain. Serve with
pizza sauce to dip. Makes 24.
*1 ounce of pork rinds should make approximately 1/2 cup crumbs. To make just whirl them in the
food processor.
