LAYERED ENCHILADA BAKE
1 pound ground beef
1 onion, chopped
16 ounces salsa
1 can black beans, drained and rinsed
1/4 cup Italian dressing
2 tablespoons taco seasoning mix
6 flour tortillas, 8 inch
1 cup sour cream*
8 ounces shredded Mexican blend cheese
In a large pan cook ground beef and onions together until done. Drain if necessary. Add
salsa, Italian dressing and taco seasoning and stir to mix well. Add black beans and heat
until beans are heated through. Set aside. In a sprayed 9 x 13 inch baking dish layer 3 tortillas
in the bottom and top with half the meat mixture and half the cheese. Repeat layers. Bake
covered in foil for 30 minutes at 400 degrees. Remove foil and bake another 10 minutes.
*The recipe calls for the sour cream to be added to each layer over the meat before baking.
I think it is better with the sour cream on top after it has been baked.
