INSTANT POT MUSHROOM & ONION GRAVY
2 tablespoons butter
1 pound button mushrooms
1 small onion, sliced
1 teaspoon minced garlic
salt & pepper to taste
3/4 cup beef broth or bouillon
2 tablespoons cornstarch
2 tablespoons water
Prepare the mushrooms first. Wash and remove stem. If mushrooms are too big cut them
into quarters. Try to make them the size of a "typical" button mushroom. Turn pot to saute and
when it reads "hot" add butter and melt. Add onions and stir about 5 minutes or until beginning
o soften. Add garlic and stir about one minute. Add mushrooms and stir about 5 minutes or
until mushrooms start to sweat. Season with salt and pepper to taste. Turn off saute, put on
lid, close vent and set to cook on high for 3 minutes. When 3 minutes are up do a quick release
of pressure. Cancel pressure cook and put back onto saute. Mix cornstarch and water together
and stir into the sauce until the gravy thickens to your liking. Taste for seasoning.
