INSTANT POT BUFFALO CHICKEN DIP
2 pounds frozen boneless, skinless chicken breasts
Sweet Baby Ray's Buffalo Chicken Sauce to taste*
1/2 cup chicken broth
1 cup ranch dressing
1 (8 ounce) packages cream cheese, softened
1 1/2 cups (6 ounces) shredded Monterey jack cheese**
Place frozen chicken breasts in instant pot and add chicken broth and hot sauce. Cover, close vent
and cook at least 10 minutes. It may take more depending on size of breasts. Check for doneness
and continue to cook longer if necessary until chicken is tender and completely done. Let pot do a
natural release for 10 minutes. Remove chicken and shred. I like using my electric beaters to get
a finely shredded chicken. It makes the dip more dippable. Set aside. Add the ranch dressing,
cream cheese, and shredded cheese to instant pot. Turn to sauté and cook and stir until cheeses
are melted and blended well. Stir the chicken back into the pot. Serve with crackers, chips or
celery.
*use as much sauce as you like for the heat level you like. You may also use Frank's hot sauce.
**If you like even more heat use shredded pepper jack cheese
