GROUND BEEF STROGANOFF
3 tablespoons butter
1 pound ground beef
1/2 chopped onion
2 cloves minced garlic
8 ounces sliced button mushrooms
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
8 ounces extra wide egg noodle, uncooked
3 cups beef broth
1 cup sour cream, room temperature
Turn instant pot to saute and when it gets hot melt the butter. Add the ground beef, onions
and garlic and cook until the beef is done. Drain if necessary. Add the mushrooms and seasonings
and cook until the mushrooms start to get soft. Cancel saute. Add the noodles and pour the
beef broth over top. Stir just enough to get the noodles under the broth as much as possible.
Cover, close vent and cook on Hi for 6 minutes. When time is up do a quick release of the pressure.
If I were to make this again I would drain just a bit of the broth off before adding the sour cream to
make it a thicker, creamier dish. Then stir in the sour cream until well combined.
