GERMAN POTATO SALAD

1 1/2 pounds red potatoes
4 slices chopped bacon, cooked until crisp (reserve 2 tablespoons drippings)
1 bunch green onions, cleaned and chopped
1/2 cup water
4 tablespoons white wine vinegar
4 teaspoons sugar
4 teaspoons Dijon mustard
salt and pepper, to taste

Wash, but don't peel potatoes and dice into smallish bite-sized pieces.  Cook in salted water until tender.
Drain and add to a large bowl.  Cook bacon and when done remove with a slotted spoon and add to
potatoes.  To reserved drippings cook green onions until tender.  Then add water, vinegar, sugar and mustard.
Cook until all is well blended together.  Pour over potatoes and stir to coat.  Salt and pepper, to taste.
