CRISPIEST BAKED CHICKEN WINGS

3 pounds chicken wings, separated or whole, it doesn't matter
2 teaspoons oil
salt and pepper to taste
2 tablespoons baking powder
Line a large baking tray with foil and spray it well; set aside. Pat each wing dry with some paper towels
and place in a large bowl. Drizzle with oil and season with salt and pepper. Sprinkle with baking
powder. I like to put mine in a small sieve and shake it over because I think it distributes better,
but that is totally optional. Now with your hands mix the wings together until they are evenly
coated with the baking powder. Place on baking tray, without touching, and bake at 450 for
30 minutes. Then flip and bake for another 25 minutes. Eat "naked" or with your favorite sauce.
