CHICKEN WITH AVOCADO SALSA
1 pound or 4 small boneless, skinless chicken breasts
Marinade
2 cloves minced garlic
3 tablespoons olive or avocado oil
1/4 cup chopped cilantro
juice of one lime
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
Avocado Salsa
2 ripe avocados, diced
2 Roma tomatoes, diced
1/4 cup diced red onion
1/4 cup chopped cilantro
juice of 1 lime
salt to taste
Mix marinade ingredients in a resealable plastic bag, or bowl if you prefer, and set aside. Place each chicken
breast, one at a time, between two layers of plastic wrap. With a meat mallet or other heavy glass, bowl, or
cast iron pan pound each breast into a thin, even thickness. Try to get each breast the same thickness. Add
to the marinade and marinate at least 30 or up to 24 hours.
Before you start making the chicken make the salsa. Simply mix all the ingredients together and set aside.
To make the chicken heat a large frying pan and add just a small bit of oil. Cook chicken on both sides until
completely done. To serve top with salsa.
