CHICKEN TAMALE PIE
3 to 4 cups cooked, shredded chicken
4 ounce can green chiles, undrained
2 tablespoons taco seasoning mix
1 cup shredded Mexican blend cheese
1 egg
1 cup Bisquick
1 cup plain cornmeal
1 can creamed corn
salsa and sour cream for serving
In a medium bowl mix together chicken, chilies and taco seasoning until well combined. Spread into
a sprayed glass pie plate. Sprinkle evenly with the cheese; set aside. In the same bowl stir together
egg, flour, cornmeal and corn very well. Spread over chicken all the way to the edges. Bake at 400
for 25 to 30 minutes or until topping is set. Serve with salsa and sour cream.
