CHICKEN FAJITA CASSEROLE
3 boneless skinless chicken thighs or breasts (cut into bite-sized pieces)
1 bell pepper, sliced into strips
1 onion, sliced into strips
Fajita Seasoning mix or taco seasoning if desired
1/2 cup sour cream
2 ounces cream cheese, softened
shredded cheddar cheese
In a large pan cook the chicken in a little oil until completely done. Remove to another dish
and add oil if needed then add peppers and onions, Stir fry until done to your desired
tenderness. Add chicken back to the pan and season with fajita seasoning, to taste, sour cream
and cream cheese. Stir until all if blended in completely. Top with as much cheddar cheese
as you like. Bake at 350 for 10 minutes or until cheese is melted. Serve in tortillas if desired or
over rice. If not using an oven proof pan pour mixture into a sprayed baking dish before
adding cheese then sprinkle with cheese.
