CHEESY SQUASH PUPPIES

5 medium yellow squash
1/4 cup minced onion or more to taste
1 cup self rising cornmeal mix*
2 eggs
1 cup shredded Monterey Jack cheese
salt to taste

Begin by slicing squash and boiling them until tender.  Drain very well.  If you let them sit in
a colander while cooling they will drain even more.  In a large bowl mix cornmeal mix and eggs
until blended. Add squash, onions, cheese and salt.  Mix until it become a uniform batter.
Drop by tablespoons full in deep hot oil and fry until golden brown. Drain on paper towels.
Makes approximately 16.

*you may also use 3/4 cup self rising cornmeal plus 1/4 cup plain flour
