CHEESEBURGER SOUP

1 pound ground beef
1 onion, chopped or to taste
4 cups diced potatoes, cooked or 2 cans diced potatoes drained and rinsed
1 can cream of mushroom soup
4 cups beef broth
1 pound Velveeta cheese, cut into cubes
8 ounces sour cream

In a large soup pot brown the ground beef and onions until done; drain if necessary.  Add the mushroom soup
and enough of the beef broth to mix together until smooth.  Then add rest of beef broth and stir.  If using canned
potatoes add now and cook until they are as tender as you like.  If using fresh cooked potatoes add after the
cheese.  Then add the cubed cheese and stir until completely melted and smooth.  Remove from heat and
thoroughly stir in sour cream.
