BUTTERNUT SQUASH CASSEROLE
3 cups cooked mashed butternut squash (you may also substitute sweet potatoes)
2 eggs, beaten
1 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 stick melted butter
TOPPING
1/2 stick melted butter
1/3 cup flour
1/2 cup brown sugar
1 cup chopped pecans
sweetened shredded coconut, to taste
Mix casserole ingredients and pour into a greased 2-quart casserole dish, Mix all the topping
ingredients except butter, then pour in butter and mix with a fork until moistened and crumbled.
Bake at 350 for 30 minutes.
