BAKED POTATO SOUP
4 large potatoes, baked, scooped out & set aside
1/2 pound bacon, chopped
1 small onion, chopped
1 stick butter
1/2 cup flour
6 cups milk
salt & pepper to taste
1 cup shredded cheddar cheese
8 ounces sour cream
Cook bacon until crisp, in batches if necessary; removed and set aside. Add butter to bacon grease and melt together;
add onion and cook until softened. Carefully whisk in flour and cook about 1 minute being sure it is smooth and without
any lumps and only very lightly browned. Slowly whisk in milk, making sure to blend out any lumps and cook until thickened
and very smooth. Stir in bacon pieces, potato, salt, pepper and cheese. Cook slowly until cheese is melted. Remove from
heat and add sour cream. Add more milk if needed for consistency.
Soup thickens up as it sits or is refrigerated, but it reheats beautifully.
