BACON RANCH CHICKEN CASSEROLE
6 - 8 ounces bacon, diced
1 cup chicken broth
1 packet ranch dressing mix
1 pound chicken breasts
8 ounces cream cheese
1 tablespoons cornstarch
1/2 cup shredded cheddar cheese
sliced green onions, to taste
Turn the Instant Pot on Saute and add the bacon. Cook until crisp and remove to a paper towel lined
dish and drain all the remaining fat. Pour chicken broth into pot and scrape up brown bits off the
bottom. The whisk in ranch seasoning mix. Put chicken down into broth and top with cream cheese.
You can add the whole block, no need to cut it into cubes. Cover and cook on high for 15 minutes.
Allow to do a natural release for 10 minutes before releasing the remaining pressure. Remove chicken
and set aside.Turn Instant Pot to Saute.Whisk really well to mix in cream cheese. Mix cornstarch with
1 tablespoon water and whisk into hot broth. Cook until thickened. You can add more cornstarch and
water if needed to thicken to your liking. While broth is thickening shred chicken with 2 forks and then
return it to the thickned broth. Pour chicken and sauce into a large serving bowl. Sprinkle with the
cheese, then the reserved bacon pieces and the sliced green onions. Makes 3 - 4 servings.
